With the weather being what it is, and hey it is winter time, the thoughts of finding something to eat all have to come with one word in mind: Warmth. I know for me, winter in particular can be a hard time to enjoy dining out, especially when all you really want to do is stay inside with a huge bowl of soup and keep warm. Then again, I honestly will make my way outside, layers and all, for a delicious meal. The Smoked Butternut Squash Soup with Apple Chutney and Garam Marsala at Red Rooster does just that.
Butternut, acorn and pumpkin squash is blended together and topped with apple chutney in this version we’re serving now. Great flavor combinations and staples for winter, they also pair well together with other notes including the Garam Marsala, a traditional spice blend which has deep roots of Indian, African and British decent. Spices such as cloves, coriander, cardamon and peppercorns all help add a tremendous amount of flavor to this soup.
