Food and memory are inextricably linked. FOOD & WINE Editor-in-Chief Dana Cowin convenes a panel of star chefs including Gabrielle Hamilton, Marcus Samuelsson and Andy Ricker to talk about how memories inspire their cooking. Some questions they’ll tackle: What are the chefs’ earliest food memories? What is the most memorable dish they’ve ever made? What makes another chef’s cooking unforgettable? Does chasing after trends ultimately lead to forgettable food? Can unhappy memories inspire delicious food? When customers take photos of their food, does it detract from their memory of the meal? The discussion will show how even a chef’s most technically accomplished dishes can spring from personal experience and reveal how emotion and artistry meet on the plate.

You’re Invited to the Three Goats Inaugural Event

By Marcus Samuelsson | March 19, 2013

Three Goats Invite

The story of Three Goats came about after Maya visited Ethiopia in November 2011 and saw the effects the famine had on the young children there. After reading about the devastation that had hit our birthplace, she flew to Addis and visited Mother Teresa’s Missonaries for Charity where they advised her on the greatest area of need for clean water and food. Knowing the dangers of traveling in the region, Maya insisted on heading to Togowichale, a border town between Ethiopia and Somalia severely endangered by the famine, to hand out food, school supplies and resources to help find clean water to nearly 1,000 people in the area.

A 501(c)(3), nonprofit organization, Three Goats is dedicated to improve the health and education of children in Ethiopia by providing sustainable access to vital resources. Its main focus is to empower young women through education and provide access to clean water and nutritious food. By showing our donors a video of where their money went, we knew we couldn’t stay quiet about the issues affecting the borders of Ethiopia. Our goal is to provide resources for people in hard-hit areas to have access to education, clean water and food centers for proper nutrition.

Marcus Samuelsson was only three years old when he, his mother, and his sister—all battling tuberculosis—walked seventy-five miles to a hospital in the Ethiopian capital city of Addis Adaba. Tragically, his mother succumbed to the disease shortly after she arrived, but Marcus and his sister recovered, and one year later they were welcomed into a loving middle-class family in Göteborg, Sweden. It was there that his new grandmother Helga sparked in him a lifelong passion for food and cooking with her pan-fried herring, her freshly baked bread, and signature roast chicken. From that stage of his early life, there was little question what Marcus was going to become when he grew up.

Yes, Chef chronicles Marcus Samuelsson’s remarkable journey from Helga’s humble kitchen to some of his experiences at the most demanding and competitive restaurants in Switzerland and France.
