American chefs have become obsessed with the art of pizza, micromanaging everything from oven temperatures to ingredients. Across the country, new pizza joints are popping up that serve charred crusts with artisanal toppings, not greasy slices on paper plates.
Co. in New York tops The Huffington Post’s list of the 25 best pizza parlors in the nation. Jim Lahey, founder of Sullivan Street Bakery, is in charge of this wildly popular pizza hotspot. His signature pie, the “Popeye,” combines pecorino, Gruyere, mozzarella, spinach, black pepper, and garlic.
Not only new restaurants made the HuffPo list. Frank Pepe Pizzeria Napoletana opened in 1925 and remains a New Haven favorite. Similarly, Burt’s Place in Chicago is a certifiable landmark-if you ever make a deep-dish pizza pilgrimage, try their pie with caramelized cheese crust.
