Best Bars For Seasonal Drinks

Besides beautiful produce, spring brings innovative new cocktails perfect for sipping on breezy nights. The mixology movement has emphasized using fresh fruits and vegetables, and in New York City, bartenders are already taking advantage of the March harvest.

At Red Rooster’s copper bar, Moses Laboy slings some of Harlem’s most deliciously seasonal drinks. The Dillio combines peanut-infused bourbon with dill, lime juice, simple syrup, and ginger liqueur. Combining African and Scandinavian inspirations, the cocktail takes the edge off New York’s blustery March weather.

In Brooklyn, Fort Defiance focuses on old-fashioned drinks and a welcoming atmosphere. This spring, Fort Defiance’s bar will debut the King Bee, a vodka based drink that involves a little lemon juice, Benedictine, bitters, and prosecco. With the base spirit, Comb vodka, getting its flowery aroma from Darjeeling-tea, the King Bee is just right for warmer spring days.

For a taste of New Orleans, head to Maison Premiere. Featuring an absinthe fountain, this bar replicates New Orleans’ sophisticated and class drinking scene. The Lafitte’s Swizzle is a mix of Pernod 68 absinthe, lime, orgeat, parfait amour, and chilled water. Sweet, nutty, and liquorice-y, this cocktail is best consumed as a festive nightcap after a heavy late March meal.
