Cabernet Sauvignon and Midnight Moon

Midnight Moon is a complex but subtle Gouda-style goat’s milk cheese. It is firm and dense with a delightful, salty graininess. The nutty caramel and buttery notes are almost more seductive than the blue-clad beauty who adorns the black wax casing of the wheel!

A perfect match with Midnight Moon is Cabernet Sauvingon. The oak flavors easily absorbed by this wine are not only pleasant, but effective in offsetting the high levels of tannin that can accumulate as it ages. A medium-bodied red works well with this cheese as it creates a play of flavors rather than overwhelming the palate.

Great additions to this combination are a hearty bread or fig preserves.
