Eggplant Season is Here!

While the term “nightshades” might make you think more of Tim Burton than nutrition, don’t fret. It’s only the classification for vegetables like tomatoes, bell peppers and eggplants. Eggplant season is approaching so you may want to start thinking about great ways to use them in your recipes.

Coming into season in June and fully developing on from July to October, eggplants are a great source of antioxidants, which help fight free radicals in the body. It is also high in fiber making it a great weight loss food. Fiber is slow acting in your digestive system making you feel fuller for longer.

Eggplants are grown all over the world, from Italy, to Egypt to China, to Turkey. They generally have a purple or white glossy skin. The flesh of an eggplant is spongy making it super absorbent so be careful when frying or sauteing as it will soak up the oils quickly.

To stay fit for summer, consider baking, grilling or roasting eggplant. Enjoy this summer staple with plantains or grill them with tomatoes and slicing them with some fresh mozzarella for an Eggplant Napoleon. You can even bake eggplant with garlic for a delicious dip that is different from the classic Baba Ganoush!

However, for sufferers of arthritis, osteoporosis, or gout, nightshades, which are part of the Solanaceae family, can cause joint pain. If you think that you might be experiencing discomfort from eating plants such as peppers, eggplants, and tomatoes, read this article and check with your doctor.
