This past year, the number of products sold in stores described as “Caribbean,” “Japanese,” and “Thai” grew dramatically. More chain restaurants are offering Caribbean, Japanese, and Thai food, too. Food media like television, newspaper, and magazine stories incite Americans to try new foods. The research suggests that cookbooks, travel, and diversifying neighborhoods also contribute to this boom.
