Second-Day Meal Of Leftovers
Sometimes it’s hard to have a vision for your leftovers. What can you do with that lamb shank and those roasted veggies? And what about those caramelized onions from burgers the other night? There’s also a head of lettuce that will wilt soon and some great looking tomatoes.
What you’ll need on hand for sandwiches is bread and condiments, such as mustard, chutneys, relishes, mayonnaise, or even sweet jams. You can also whip up a quick vinaigrette to drizzle over one slice of bread. Cheeses are also a great way too boost flavor and the heartiness of a meal. Almost any type of cheese is a great sandwich addition.
Chopped lettuce, tomato, and even apple are also potential additions to sandwiches. Leftover meat roasts (or meat substitutes, such as tofu) can be sliced thinly to fit on the sandwich – try out combinations such as:
* Caramelized onion, ham roast, mustard, Manchego cheese, and lettuce
* Tofu, bean sprouts, and mango chutney
* Roasted turkey, pesto, swiss cheese, sun-dried tomatoes, and arugula
When I make a sandwich at home, I try to make the filling thicker than the bread and then cut it in halves or quarters for a satisfying meal.
Tacos are also fun – they’re little packages of flavor. And taco night is a great way to get your kids excited about helping with dinner. Take any leftover ingredients in your fridge and set out bowls of each ingredient. Your kids will get really excited about “Make Your Own Taco Night.” It makes dinner fun, easy, and fast.
For an adult version of this fun dinner, try using the same leftover main in separate tacos with different ingredients. Throw together a quick topping of diced raw onion, tomato, and cilantro to top other veggies or meat dishes. Add to the top a salsa mix some chicken, beans, and some sour cream or lamb and chopped lettuce or even leftover stirfry tossed with some soy sauce or Sriracha.
Sandwiches and tacos are great ways to experiment with leftovers and flavor combinations!
