Oprah Winfrey’s Company Is Going Vegan For one Week

Could you go entirely vegan for a week? That means no animal products whatsoever: no meat, no fish, no cheese, no eggs. Best-selling author Kathy Freston challenged employee’s of Oprah Winfrey’s company, Harpo, to forgo animal products for a week.

378 Harpo employees signed up for this awesome challenge. Kathy suggested vegan alternatives to Pizza for Jill, a senior supervising producer at Harpo, and her family, all of whom are partaking in the project. For fast-food-lover Veronica, eating vegan was a challenging transition, leaving her feeling “angry.” In the end, though, Veronica continued with the vegan diet, for 21 days!

Your weight starts to drop within a week of eating vegan, says Kathy. One staffer at Harpo, video editor Rich, lost 11 pounds in the week he ate vegan, and he said he felt better after the third day than he had in 10 years. He is keeping up with his new lifestyle by incorporating vegetables and whole grains, and reducing simple carbohydrates.

There’s no need to worry about getting enough protein if you’re going vegan for a week. Quinoa and legumes have protein, as does tofu!

* Kale and White Bean Stew (Substitute canola or olive oil for butter.)
* Artichokes with Capers and Lemon
