Pack a Purple Punch in Your Diet

While nutritionists have advocated for a produce-rich rainbow plate at mealtimes, purple foods in particular are capturing attention. It seems that the purple pigment anthocyanin, frequently extracted to use as a dye for other foods, has healthful properties in its natural sources, that is, in produce.

Anthocyanins also appear as red or blue hues in fruits and vegetables depending on their levels, with purple as the most potent form. This pigment is found mainly in fruits and especially in berries, such as grapes, blackberries, and cranberries. Vegetables containing anthocyanins include purple carrots, purple corn, beets, and eggplants.

These common and colorful foods contain antioxidants, which are said to help in maintaining overall health and improving the immune system in particular. Anthocyanins are even found in red wines, which also contain another antioxidant, reservatrol.
