Lentils are one of my favorite foods, rich and full of flavor, so I was intrigued to see a Fox News story calling them a “superfood.” Tanya Zuckerbot writes about the nutritional benefits of lentils in her article, “Superfood: Eat Your Lentils!”
Although lentils have a bad reputation as bland and chewy, they actually possess a nutty, savory flavor and can be quite tender. Legumes, lentils have lots of protein and fiber and barely any fat. Furthermore, just one cup of lentils meets 90% of your recommended daily folic acid, an important nutrient for a healthy heart. Super cost-efficient, lentils are an economical, nutritionally dense dinner option.
