This week’s photos of Food & People is part of a photographic series of different cities by Charlie Grosso. Below is what Charlie has to say about the photos and her experience of Tsukiji, Japan.

Tsukiji Fish Market in Tokyo, Japan. The largest fish market in the world, handling over 2000 meteoric ton of seafood per day. This is a must shoot as part of Wok the Dog. In the hectic 4 am auction and frenzy of processing, the expediency and efficiency of the market place is breath taking. An entire warehouse of tuna is auctioned off in less than 15 minutes and off to the buyers for processing before I have a chance to turn around and pull off another shot. The speed of sales is a reflection of the speed of our consumption. In the fervor Tsukiji, it is the quieter moments where the fish mongers with skilled hands savoring a smoke that stays with me.
