What is New Nordic Cuisine?

We’ve all heard of Chinese, Italian, Thai, and Greek food, but there is a new cuisine that is hitting the world, one region at a time. This new cuisine technically isn’t that new, as it has been around for years, but it is certainly new to New York City. The cuisine were talking about is New Nordic Food.

New Nordic cuisine is all about ‘purity, simplicity, and freshness’ in all Nordic regional ingredients. It’s all about developing unique dishes that look towards the overlooked ‘fish, game and produce local creations from the Arctic tundra to The Norwegian fjords’. Basically this type of cuisine is all about taking modern approaches to cooking, using the freshest ingredients and created something magical.

If you’re looking to explore this new cuisine here in New York, venture on down to Acme on Great Jones Street where owner Mads Refslund has slid onto NYC restaurant scene like no other chef. Haling from Denmark, along with Rene Redaepi, the two have create a brilliant restaurant that boasts a whole lot of New Nordic charm. The restaurant experiments with molecular gastronomy along with cultivating dishes like no other. Take for instance the blackened sunchokes, they will ‘remind you of marshmallows that got too close to the fire, but offer up an undeniably wonderful taste.’

The beauty of the New Nordic cuisine is the fact that chefs will now venture off to Sweden to learn to ‘respect and organization and education and making food in the most natural way possible.’
