Fresh berries add an unexpected twist to the feta and black bean tacos.

I can’t seem to control myself around strawberries these days. I buy flat after flat with the intention of DOING something with them, but they just look so juicy and sweet and perfect that I end up eating them, straight from the carton, unabashedly “as is”.

That is, until I made these tacos. And now I can’t think of doing anything else with them! They are the perfect mix of sweet spicy savory and allow you to still appreciate the beautiful flavor of in-season berries, just in a new (and equally delicious) light.

This morning, instead of my usual yogurt and fruit, I craved some combination of eggs, vegetables, and cheese. I opted for asparagus, which I love but don’t use often. Thanksgiving is finally over and by now all of your leftovers should be gone too.  Did you have a vegetarian Thanksgiving?  I did and it was truly wonderful.  At my Thanksgiving there was a creamy green bean casserole, rich scalloped potatoes, steamed brussels sprouts, cranberry sauce made from scratch, candied sweet potatoes, and a yummy cherry pie.  As the American tradition goes, I ate more than I could handle and then afterwards sunk a little bit deeper than usual into the couch to catch up with the family.
