Strawberry, Balsamic Basil Grilled Cheese Recipe

Fresh berries add an unexpected kick to a grilled cheese favorite.

Strawberries in desserts are expected (and delicious) but it’s when we mix our sweets with our savories that things start to get really interesting. In the past, I’ve had great success pairing strawberries with basil and separately, with balsamic…but what about all three together? If this grilled cheese is any indication, then they are a trio made in heaven. The syrupy, almost sweet tangy vinegar is perfect for really bringing the berries and herbs together, while the brie unites them in sandwich unity, making each bite more exciting than the last.

This summer-long heatwave has us all moaning and groaning at the thought of slurping down anything that does not start with the word “ice” and end with the word “cream”, and the thought of soup is enough to send anyone into hysterics.

But I beg of you.  Hear me out.

The green goddess soup that we’re tasting today is filled with the bright summer flavors of zucchini, lemon and cilantro.  It’s light in such a way that even though it’s served warm, drinking it down still feels utterly refreshing.

Paired with a pesto mozzarella grilled cheese with the bright flavors of basil, the duo positively exudes summer. The two work so well together that after every bite or slurp, you’ll find yourself smiling a bit to yourself, grateful that summer and all its delicious produce is unremittingly here. Most of the time when a craving hits, it’s for two things: carbs and cheese. Usually together.

And while I generally try to convince myself that even though I may think I want mac and cheese all day every day, what I really want is an apple or a salad or both….sometimes I just have to give in. On those days, I make grilled cheese.
