On the second episode of The Feed, we were challenged to create new mashup dishes. After consulting with Pastry Chef Dominique Ansel, creator of the cronut and king of the culinary mashup, I decided on making Swushi.  Swushi is fun to say, but even more exciting to eat. This recipe blends the flavors of my heritage through Ethiopian injera and Swedish gravlax to create a new kind of Japanese sushi.

Kimchi Mac-n-Cheese Recipe

Before I left for my vacation a few weeks ago,  I was scrambling to use my CSA veggies without them going to waste while I was gone. What resulted was a pickled corn salad, pickled bean salad, bread and butter pickles and kimchi, because what else does one actually do with cabbage?

Last night as I was scrounging around the kitchen looking for something to cook for dinner, I decided comfort food was the way to go. What better way to enjoy the autumn weather than with comfort food made with summer’s bounty. What resulted was this kimchi macaroni and cheese– while the recipe needs some perfecting, there is definitely a good start in this pot of cheesy, spicy, fermented goodness.

 

 

Spicy Adzuki with Kimchi and Tempeh Recipe

I first became enamored with kimchi after encountering it at a food festival in NYC last summer. My friends and I had sampled a few too many of the desserts on offer and were in search of something to cleanse our palates from all that sugar. Eventually we stumbled across a booth selling kimchi – problem solved. I can’t remember anything ever tasting so refreshing in it’s spicy tang.

Since then I’ve been borderline obsessed with incorporating it into my life wherever possible. Mostly I eat it plain but recently I came across this recipe that incorporated it into a stir fry and I was instantly sold. Though the original recipe only called for stir frying it with beans and tempeh, I added some asparagus into the mix because I never feel like a meal is complete unless it contains something green. Plus they added a nice hint of sweetness to all the other bold flavors in this meal.
