Cooking more seafood is like getting into a cold pool. You just have to jump right in!  Start with a fish and flavors you like, a recipe source you trust, and branch out from there.  I created my Tropical Salmon and Mango in Foil to capture my love of both salmon and mango.  It’s easy enough for everyday yet just different enough to be enticing.  Making the effort to put seafood on your home menu and keeping track of your favorites  will give you a reservoir of dishes you can turn to for that one more seafood meal a week your body is yearning for.

As the weather starts getting warmer, I find myself craving tropical fruits.  It’s as if there’s a switch deep down in my subconscious that feels the sixty degree weather and responds with “pineapple mango papaya coconut time!”  And while I think what it really wants is for me to take this cue and run away to Latin America with it, I frequently just end up throwing mangoes into any and every dish that I make.  Salads, stir fries, and, as seen here, picadillo.

It was a sad, sad day last weekend when I went to pick out the mango pieces from a fruit salad that my mother had bought for dessert so I could devour them all singlehandedly and found that all five of them were as unripe as mango-ly possibly. They were hard and dry; and had that bad chalky taste that mangoes unsuitable for eating tend to have.
