Soba Noodles with Mango

It was a sad, sad day last weekend when I went to pick out the mango pieces from a fruit salad that my mother had bought for dessert so I could devour them all singlehandedly and found that all five of them were as unripe as mango-ly possibly. They were hard and dry; and had that bad chalky taste that mangoes unsuitable for eating tend to have.

To make up for the traumatic experience and so that I wouldn’t have to have the memory of those inedible mangoes forever engrained in my mind, I turned to this soba noodle salad.

At the end of almost every week, I am left with crisper guilt.  No matter how much menu planning I do, how many copies of my shopping list I take with me to the grocery store, or how many cookbooks I sleep with under my pillows, when I open up my crisper on Friday I am inevitably greeted by a drawer full of slightly wrinkled, almost ready to bite-the-dust vegetables. It’s heart wrenching, each and every time.

Thanks to recipes such as this Oaxacan green mole stew, however, I no longer have to cry myself to sleep at the thought of all the produce I’ve let go to waste, Read More

Looking to spruce up your usual summer potato salad? By adding just a couple special ingredients or even changing the type of potato, you can bring that ordinary potato salad back to life. Here I used sweet potato to give this potato salad an unusual kick. The color combination of orange and black is more Halloween than Fourth of July, but to me this salad is all summer. The cinnamon gives it an earthy fall flavor, but the lime kicks it back into the sunny season we all love. I prefer it to regular potato salad because sweet potato can be more flavorful and dimensional, as well as healthier because of its fiber content.
