After a hard day’s work it’s sometimes hard to find inspiration, and if you also have to entertain and serve a group of people as well then your brain might be more fried than a frittata. Look no further than this tasty zucchini dip made with Greek yogurt.
This recipe will take you more time in the long run since it needs to sit and marinade, but the preparation is so quick and easy that you’ll be serving it all the time as a great dip. This dip is best when served with slices of tomatoes or eggplant or with whole wheat crackers.
Packed with fiber, this summer squash has myriad health benefits. Zucchinis have zero fat and provide vitamins A and C. The Greek yogurt also makes it a great healthy and tasty treat!
Zucchini Dip with Greek Yogurt Recipe

Ingredients
- 2 small zucchini, cut into 1/4-inch cubes
- Small sprinkling of chopped chives
- 2 cups plain Greek yogurt
- Oregano, to taste
- Garlic powder, to taste
Directions
Combine the zucchini, yogurt, chives, oregano and garlic powder. Cover with plastic wrap and chill in the refrigerator for at least an hour.
Serve slightly chilled or at room temperature for maximum taste!
