With the blossoming of spring comes some beautiful produce to look forward to. Asparagus is one of my favorite spring vegetables. Its light and fresh flavor can add brightness to any dish.

Either as a great Meatless Monday dish or a satisfying side, my asparagus with citrus vinaigrette celebrates the best that asparagus has to offer. I like using both green and white asparagus for contrasting colors and flavors.
