I’ve learned to love catfish during my time living in America. For this recipe, I don’t adhere strictly to Southern spices-I use a rub that I think works particularly well with mild catfish flesh. Just the other day I served a Blackened Catfish Sandwich for the Harlem Jazz and Music Festival and paired it with Sweet Potato Fries. The dish came out great!
