Healthy and tasty, my ground turkey patties make an easy dinner with couscous on the side. On busy weeknights, you can get a delicious dinner on the table fast using this recipe. 

Ground Turkey Patties with Couscous Recipe

Servings: 4
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes

Ingredients

  • 1 cup semolina couscous
  • 5 tablespoons olive oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 2 tablespoons mild chili powder
  • 1 cup stewed chopped canned tomato
  • 1 egg
  • 1/2 cup raisins
  • 1 cup water
  • 1 pound ground turkey
  • 2 cups spinach
  • salt and pepper

Directions

Heat 2 tablespoons olive oil in a sauté pan over medium heat. Add the onion and sauté until translucent, about 3 minutes, followed by garlic, and chili powder.

Set half of the onion mixture aside in a mixing bowl for the patties.

Stir in 3/4 cup couscous to the sauté pan and toast for 1 minute.

Add tomatoes, water and raisins to the pan simmer for 10 minutes. Finish by folding in the spinach and season with salt and pepper.

Combine the cooled onion and garlic mixture, 1/4 cup couscous, 1 tablespoon olive oil and egg in a bowl. Whisk ingredients. Add ground turkey. Season with salt and pepper. Using hands, mix the ingredients well. Shape mixture into four large patties. Tip: wetting hands with water will make this last step easier and prevent the patties from sticking to your hands.

Heat remaining 2 tablespoons of olive oil in a sauté pan and sear patties on medium heat 2-3 minutes on each side.

Serve patties on top of couscous.
