How to Spice Up a Vegetarian Dish: Bibimbaap

Mix up boring vegetables with some ethnic flair.

Our First Lady has done some incredible things for America and amongst her endless list of impressive endeavors is one that speaks to every person and family as it addresses our health. The Choose My Plate initiative is a great way to visually address the way we eat as it compartmentalizes your plate into categories of fruits, grains, proteins, vegetables, and dairy.

A great way to get inspired about your veggies and grains is to explore how different cultures prepare them. It will open your mind and palette to so many different tastes and textures as well as introduce some ‘exotic’ vegetables to the oh so predictable veggie list of kale, broccoli and cauliflower!

RECIPE: Korean Bibimbaap

Inspired by Choose My Plate, I chose to make Bibimbap –one of my all time favorite Korean dishes. Bibim means mixing and Bap means rice. This dish incorporates rice and banchan, Korean side vegetables that you mix together, hence: Bibimbap. There are many banchan you can use but I’ve gone with a mixture of carrots, spinach, zucchini, bean sprouts, mushrooms and topped it all off with a fried egg!
