Honor Michael White at C-CAP Annual Benefit

Every year, the Careers for Culinary Arts Program holds a benefit to celebrate a chef who has made a significant contribution to the culinary world, becoming a role model for C-CAP students and alumni. This year, the honored chef is Michael White of the Altamarea Group. Alongside Chef White, nearly 40 featured chefs—including Marcus—will be offering up delicious foods, with the assistance of C-CAP current students and alumni.

Marcus in LA: Post & Beam Dinner in Baldwin Hills

It was delicious magic in Baldwin Hills last night when Master Chefs Marcus Samuelsson and Govind Armstrong shared the kitchen at Post & Beam Restaurant to benefit the Careers through Culinary Arts Program (C-CAP). A long way from Harlem, Chef Samuelsson took the flavor and flair of Red Rooster across the country to team up with Chef Armstrong to celebrate Black History Month through a culinary lens, while reaching out to help the next generation of chefs realize their dreams though C-CAP, which helps underserved high school students train to enter professional kitchens and ultimately compete for culinary scholarships. Evidently, this event was years in the making and the kitchen was filled with very lucky and hard-working students dressed to the nine’s in their chef’s coats, standing proud and ready to work alongside the chefs. Experiences at the International Chef’s Congress

I recently had the pleasure of attending StarChefs.com’s 7th Annual International Chef’s Congress, whose theme this year was “Origins and Frontiers.” Besides getting to meet some amazing talent in the food industry, I also got to sit on a panel with some great minds: Chefs John Besh and Sat Bains (of Besh Restaurant Group and Restaurant Sat Bains, respectively) and Richard Grausman, founder of Careers through Culinary Arts Program (C-CAP). CCAP’s 2012 Annual Benefit

Last night I had a wonderful time at CCAP’s 2012 Annual Benefit held at Chelsea Piers. CCAP, short for Careers through Culinary Arts Program, is an organization that I hold close to my heart. The organization works with public schools across the country to prepare underserved high school students for college and career opportunities in the restaurant and hospitality industry. Last night they held their annual benefit where more than 35 chefs, including myself, set up shop for an extravagant tasting reception.  Greats like Jonathan Waxman, George Mendes, Michael Lomonaco, Bill Telepan, and many more gathered to help raise funds for this great organization and also to pay tribute to this year’s CCAP honoree Michael McCarty.

Hundreds of guests gathered as all the chefs prepared tasting portions of some of their restaurant creations. Along with my sous chefs, I prepared a Hominy Risotto with Smoked Mackerel and Lemon Confit. Read More
