Happy Hour: Spiked Sparkling Rhubarb Lemonade

Nothing beats happy hour when the weather is warm and you can sit outside and enjoy a cocktail or two…or three (who’s counting?) But when it’s made with seasonal ingredients, it’s going to taste that much better. This rhubarb-lemonade is refreshing and just what is needed on a lovely spring afternoon.

Here’s how to make it:

Adapted from Food52 (makes 6 servings)

  • 3  cups water
  • 4 cups chopped fresh rhubarb
  • 3/4 cups sugar
  • 2 3 – inch strips lemon zest
  • 3 sprigs fresh mint
  • 1 cup fresh lemon juice
  • 2 cups sparkling water
  • 6 ounces gin

In a saucepan, stir together the water, rhubarb, sugar, lemon zest and mint. Bring the mixture to a boil, reduce heat, cover and simmer for 20 minutes. Let the rhubarb mixture cool, then strain it through a wire-mesh strainer set over a large pitcher. Press on the solids to extract as much liquid as possible, and then discard the solids. Stir in the lemon juice, soda, and gin. Serve over ice, garnished with a sprig of mint.
