Miso Reishi Mushroom Stock
- 1/2 cup reishi mushrooms
- 1/2 cup assorted mushroom stems
- 1 onion , end only
- 1 clove garlic
- 2 tablespoons adzuki bean miso
1. Place all ingredients except the miso into a small stock pot.
2. Bring to a boil, then immediately reduce the heat and simmer for 30 minutes. occasionally skimming off the foam that comes to the surface.
3, Strain and add the miso.
4. Use as a base for soups and sauces.
